Our Chardonnay, from Woodside and Hahndorf in the Adelaide Hills, was whole bunch pressed and femented in a combination of new French oak and stainless steel. We employed gentle Batonnage post fermentation to create texture and mouthfeel. Pure and intense, white peach, grapefruit and hints of ginger spice work in harmony with a pristine acid profile, a wonderfully textured pallate and a subtle layer of French oak, to create a sine of great elegance and complexity.
