Our Chardonnay, from Hahndorf in the Adelaide Hills, was a whole bunch pressed and fermented in a combination of new French oak and stainless steel. We employed gentle Batonnage post-fermentation to create texture and mouthfeel. Pure and intense, white peach, grapefruit and hints of ginger spice work in harmony with a pristine acid profile, a wonderfully textured palate and a subtle layer of French oak, to create a sine of great elegance and complexity.
